Simple Sourdough Discard Granola Bars

Soft, chewy, and lightly tangy, these Sourdough Discard Granola Bars turn leftover starter into a wholesome, zero‑waste snack. Packed with rustic oats and warm, pantry‑friendly flavors, they’re the perfect make‑ahead treat for lunchboxes, meal prep, and everyday farmhouse snacking.


Ingredients

  • 2 cups quick oats
  • 1 cup puffed rice cereal
  • 1/2 cup sourdough discard
  • 6 TBSP honey
  • 6 TBSP peanut butter
  • 1 tsp vanilla
  • 1/2 tsp salt
  • 1/2-3/4 mix-ins (chocolate chips, mini chocolate chips, nuts, etc.)


Instructions

  1. Preheat oven to 350. Either line a 8×8 baking pan with parchment paper or spray well with cooking spray.
  2. In a medium sized bowl combine the oats, cereal, and salt. Add in the sourdough discard, honey, peanut butter, and vanilla. Mix until everything is well coated. Fold in your mix-in.
  3. Pour into the prepared baking dish. Spread out and press it into the pan firmly so the bars hold together.  Bake for 15 minutes.  Let cool for at least 30 minutes prior to cutting and serving.  Enjoy!
