Meat & Vegetables

  • 2 lbs ground beef (we prefer 90/10)
  • 1 cup frozen diced onion or 1 fresh yellow onion, diced
  • 1 bell pepper, diced (fresh or frozen)
  • 2 tablespoons minced candied jalapeños OR 1 fresh jalapeño, seeded and minced (optional)
  • 6 cloves garlic, minced

Spices

  • 2 tablespoons chili powder
  • 1 teaspoon cumin
  • 1/2 teaspoon smoked paprika
  • Salt and pepper, to taste

Tomatoes, Beans & Liquids

  • 1 quart crushed tomatoes
  • 1 can black beans (or kidney beans, if preferred)
  • 1/4 cup ketchup
  • 1 cup beef broth
  • 1/2 can tomato paste

Instructions

  1. Add about 1 tablespoon of oil to the bottom of a large pot or Dutch oven. Turn heat to medium.
  2. Add the diced onions and peppers. Cook for about 10 minutes, or until they begin to soften.
  3. Add the ground beef. Break up the meat as it browns, cooking for about 10 minutes.
  4. Add the minced garlic and cook for 1 minute.
  5. Add all remaining ingredients. Stir well to combine.
  6. Lower heat to a simmer, cover, and cook for at least 30–45 minutes.
  7. For deeper flavor, simmer several hours, stirring occasionally.
  8. Serve hot with your favorite toppings.
