Wet Ingredients:

    • 2 eggs

    • ½ cup avocado oil

    • 2 cups milk

    • 1 tsp vanilla

Dry Ingredients:

    • 305 g soft white wheat berries (to mill into flour)

    • 1 tbsp baking powder

    • 3 tbsp sugar

    • ½ tsp salt

Instructions

  1. Weigh and mill the wheat berries into fresh flour.
  2. Plug in your waffle iron and set it to medium‑high heat.
  3. Whisk together the dry ingredients: freshly milled flour, baking powder, sugar, and salt.
  4. Mix together the wet ingredients: eggs, avocado oil, milk, and vanilla.
  5. Combine the wet and dry ingredients, whisking until just blended.
  6. Fill the bottom of the waffle iron with batter, then flip the waffle maker.
  7. Cook according to your waffle iron’s instructions. Mine has a light that tells me when to flip back.
  8. Peek inside to check for doneness, then remove the waffle.
  9. Place cooked waffles on a cooling rack to keep them crisp until serving.
  10. This recipe makes 3 Belgian‑style waffles.
