  • 1 tsp baking soda

  • 1 tsp cinnamon

  • 2 tsp pumpkin pie spice

  • ½ tsp salt

  • 2 eggs

  • ½ cup sugar

  • ½ cup brown sugar

  • 1 ½ cups pumpkin purée

  • ½ cup avocado oil

  • ¼ cup orange juice

Instructions

  • Preheat oven to 325°F and prep your loaf pan.

  • Weigh and mill 240g soft white wheat berries.

  • Whisk together the freshly milled flour, baking soda, cinnamon, pumpkin pie spice, and salt.

  • In a separate bowl, mix eggs, sugar, brown sugar, pumpkin purée, avocado oil, and orange juice.

  • Add dry ingredients to wet and stir until just combined.

  • Pour batter into the loaf pan.

  • Bake 60–75 minutes, or until a toothpick comes out clean.

  • Cool in the pan for 10 minutes, then move to a rack to finish cooling.
