For the Applesauce Bars

  • 1/3 cup avocado oil
  • 1/2 cup brown sugar
  • 1/2 cup applesauce
  • 1 tsp vanilla
  • 135g soft white wheat berries (to mill)
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1/8 tsp ginger

Cream Cheese Frosting

  • 4 oz cream cheese, softened
  • 1 tbsp butter, softened
  • 1/2 tsp vanilla
  • 1 cup confectioners’ sugar

Instructions

  1. Preheat oven to 350°F.
  2. Grease an 8×8 baking pan.
  3. Weigh and mill 135g soft white wheat berries.
  4. In a mixing bowl, whisk together the dry ingredients: fresh‑milled flour, baking soda, salt, cinnamon, nutmeg, and ginger.
  5. Add the remaining wet ingredients — avocado oil, brown sugar, applesauce, and vanilla.
  6. Mix until just combined.
  7. Pour batter into the prepared pan and spread evenly.
  8. Bake for 20–25 minutes, or until the center is set.
  9. Cool completely before frosting.

Cream Cheese Frosting

  1. Add the cream cheese, butter, and vanilla to a bowl.
  2. Whisk together or use a hand mixer until smooth.
  3. Add the confectioners’ sugar and mix until creamy and fully combined.
  4. Frost bars once they are completely cooled.
