Soup Base

  • 1 lb ground beef (we prefer 90/10)
  • 1 onion, chopped
  • ½–1 cup carrots, sliced
  • 1–2 stalks celery, chopped small
  • 6 cloves garlic, minced

2 TBSP butter

  • 3 TBSP flour (or cornstarch for gluten‑free)
  • 4 cups chicken broth (homemade or store‑bought)

1 cup heavy cream

  • 1 cup corn (fresh, frozen, or home‑canned)
  • 4 small/medium russet potatoes, peeled and cubed

Seasonings

1 tsp salt

½ tsp pepper

1 tsp garlic powder

1 tsp onion powder

½ tsp dried thyme

ÂĽ tsp dried oregano

ÂĽ tsp dried parsley

ÂĽ tsp smoked paprika

Instructions

  1. Drizzle about 1 tablespoon of olive oil into a Dutch oven or other heavy soup pot.
  2. Add the onions, carrots, and celery. Cook for 5–10 minutes, stirring occasionally, until the vegetables begin to soften.
  3. Add the ground beef and cook for 8–10 minutes, breaking up the meat as it browns.
  4. Add the butter and garlic. Once the butter melts, sprinkle in the flour and stir well. Cook for 1–2 minutes to remove the raw flour taste.
  5. Slowly pour in the chicken broth, stirring continuously to avoid lumps.
  6. Stir in the heavy cream.
  7. Add the corn, potatoes, and all seasonings (salt, pepper, garlic powder, onion powder, thyme, oregano, parsley, smoked paprika).
  8. Bring the soup to a gentle boil, then lower the heat to a good simmer.
  9. Partially cover with a lid and cook for 15–20 minutes, stirring occasionally.
  10. Check the potatoes — once they are fork‑tender, turn off the heat so they don’t overcook.
  11. Serve warm with shredded cheese, crackers, fresh herbs, or hot sauce if desired.
