  • 270g soft white wheat berries (to mill)
  • 1 tsp baking soda
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 2 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/8 tsp cloves

Wet Ingredients

  • 1/2 cup brown sugar
  • 1/4 cup granulated sugar
  • 1/2 cup butter, melted and cooled slightly
  • 2 eggs
  • 1 can pumpkin puree or 2 cups homemade pumpkin puree

Cinnamon‑Sugar Coating

  • 3 tbsp melted butter
  • 1/4 cup sugar
  • 1 tsp cinnamon

Instructions

  1. Preheat oven to 350°F. Prepare donut pans by lightly greasing them.
  2. Weigh and mill the wheat berries.
  3. In a separate bowl, whisk together the freshly milled flour, baking soda, baking powder, salt, cinnamon, nutmeg, and cloves.
  4. In another bowl, cream together the melted butter and sugars.
  5. Add the eggs and pumpkin puree, mixing until smooth.
  6. Combine the wet and dry ingredients, stirring until just incorporated.
  7. Scoop the batter into a zip‑top bag, snip off one corner, and pipe the batter into the donut cavities.
  8. Bake for 12–14 minutes, or until the donuts spring back when lightly touched.
  9. Let cool for a few minutes before removing to a cooling rack.
  10. Brush each donut with melted butter, then dip or sprinkle with the cinnamon‑sugar mixture.
  11. Shake gently to remove excess. Enjoy warm.
