  • 1 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1/8 tsp cloves
  • 1 tsp baking soda
  • 1 cup old‑fashioned oats
  • 3/4 cup quick oats
  • 1/2 cup softened butter
  • 1/2 cup brown sugar
  • 1/4 cup granulated sugar
  • 1 egg
  • 1 tsp vanilla extract
  • 1 apple, finely diced

Instructions

  1. Mill your 135g soft white wheat berries into fresh flour.
  2. In a medium bowl, whisk together the fresh‑milled flour, cinnamon, nutmeg, cloves, baking soda, old‑fashioned oats, and quick oats.
  3. In a large mixing bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy.
  4. Add the egg and vanilla extract; mix until smooth.
  5. Add the dry ingredients to the wet ingredients and stir until just combined.
  6. Fold in the finely diced apple.
  7. Scoop dough onto a parchment‑lined baking sheet.
  8. Bake at 350°F for 10–12 minutes, or until edges are set and centers look soft.
  9. Cool on the baking sheet for 5 minutes, then transfer to a cooling rack.
  10. Enjoy warm — these cookies are best the day they’re made.
