- 250g freshly milled soft white wheat
- 1 tsp baking soda
- 1/2 tsp baking powder
- 1/4 tsp salt
- 1 tsp cinnamon
- 3 medium over‑ripe bananas, mashed
- 1/3 cup avocado oil
- 2/3 cup packed brown sugar
- 1 egg
- 1 tsp vanilla
Instructions
- Preheat oven to 375°F and spray or line a mini muffin tray.
- Weigh and mill your soft white wheat berries.
- In a medium bowl, whisk together the dry ingredients.
- In a separate bowl, whisk together the wet ingredients.
- Add the wet ingredients to the dry ingredients and stir until just combined.
- Scoop into the muffin tray, filling each cup about 3/4 full.
- Bake for 8–12 minutes, or until a toothpick comes out clean.
