Tortellini Pasta Salad

Description

This tortellini pasta salad makes the perfect side dish for any spring or summer BBQ! With fresh ingredients and a light dressing dressing, this is a pasta salad recipe you don’t want to skip over.


Ingredients

For the salad:

12 Oz. Cheese Tortellini

1/2 English Cucumber, cut into quarters and sliced

8 Oz. Fresh Mozzarella Pearls

1 Cup Diced Ham

1/2 Cup Banana Peppers, drained

1/4 Cup Red Onion, diced

1/4 Cup Italian Parsley, chopped

For the dressing:

1/4 Cup Olive Oil

1/4 Cup Red Wine Vinegar

2 TBSP Grated Parmesan Cheese

1 Tsp. Minced Garlic

1 Tsp. Onion Powder

1 1/2 Tsp. Italian Seasoning

1/2 Tsp. Salt

1 Tsp. Pepper


Instructions

1. In a 1/2 pint mason jar, or small bowl combine all of the ingredients for the dressing. Mix well and set aside.

2.  Bring a large pot of water to a boil, and cook tortellini according to package instructions. While waiting for the tortellini, combine the cucumber, mozzarella, ham, banana peppers, red onion and parsley. Stir to combine.

3. Once the tortellini is cooked, drain and rinse under cold water for a few minutes to bring the temperature down. (You don’t want to add warm tortellini in with the other ingredients or you risk melting the mozzarella.). Once cooled slightly, stir in with the other ingredients. Remix the dressing and pour over the top of the tortellini pasta salad. Mix gently to get everything coated. Refrigerate for a couple of hours prior to serving. Enjoy!
