3 1/2 cups rolled oats
1 cup shredded coconut
1/2 cup pepitas (pumpkin seeds)
2 teaspoons cinnamon
1 teaspoon pumpkin spice
1/4 teaspoon salt
1/2 cup melted coconut oil
1/2 cup pure maple syrup
Preheat your oven to 250°F and line a baking sheet with parchment paper.
Add all ingredients to a large mixing bowl.
Stir until everything is well combined and evenly coated.
Pour the mixture onto your lined baking sheet and spread it out evenly.
Bake for 45 minutes — do not stir during baking. Stirring breaks up the clusters.
