A quick and easy recipe for delicious Cinnamon Coconut Pecan Granola.  Great for a crunchy, healthy snack or a quick and easy breakfast.


Ingredients

2 C. Rolled Oats

1 C. Chopped Pecans

1/2 C. Shredded Coconut

2 Tsp. Cinnamon

1/4 C. Coconut Oil (melted)

1/4 C. Honey

1 Tsp. Vanilla

1/4 Tsp. Salt


Instructions

1. Preheat oven to 250 degrees fahrenheit.  Line a baking sheet with parchment paper.

2. In large bowl combine oats, pecans, coconut, cinnamon, and salt. Stir in the melted coconut oil, honey, and vanilla until everything is well combined and coated.  

3. Spread evenly on the baking sheet and bake 40-45 minutes.  Let the granola cool on the pan, it will get crunchy as it cools. Enjoy!
