Hot Honey Diced Sweet Potatoes For Two

This hot honey diced sweet potatoes recipe is the perfect combo of spicy and sweet. This is a small batch recipe, perfect for two!

This recipe takes very little prep time. From chicken, to steak, to pork chops, this recipe rounds out any meal.

What you need to make hot honey diced sweet potatoes:

  • 1 large sweet potato diced into about 1/2″ cubes
  • 3 TBSP butter
  • 2 TBSP honey
  • 2 tsp sriracha style hot sauce
  • 1/2 tsp salt
  • 1/4 tsp pepper

  • Baking sheet
  • Parchment paper
  • Sauce pan
  • Whisk
  • Spoon
  • Measuring spoons
  • Bowl

How to make hot honey diced sweet potatoes:

Step One:

Preheat oven to 425f. Wash, peel and dice sweet potatoes then place in a bowl. In a small sauce pan, combine the butter, honey, hot sauce, salt, and pepper. Whisk to combine. Bring the sauce to a boil, and then reduce to a simmer stirring frequently for about 2 minutes. Remove from heat.

Step Two:

Line a baking sheet with parchment paper. Pour about 3/4 of the sauce over the sweet potatoes, keep some reserved to top with after baking. Toss the sweet potatoes in the sauce until well coated. Spread the sweet potatoes out on the baking sheet. Bake 20-25 minutes or until fork tender.

Step Three:

Once the sweet potatoes are fork tender removed from the oven. At this point you can either drizzle the remaining sauce over the potatoes while they are on the pan and serve directly from the pan, or you can transfer the potatoes to a bowl and toss with the remaining sauce.

Note: If the sauce has thickened too much while then potatoes were cooking, just quickly reheat the sauce on the stove before drizzling the potatoes.

TIPS:

– If you are in a bit of a time crunch, you can peel and cut the potatoes in advance. Just put them in a bowl and cover with water. Place them in the fridge until you are ready to cook, and then just drain off the water first.

-I used a sriracha style hot sauce for us, but feel free to use your own preferred hot sauce. Use less or more depending on your heat preference.

Ingredients

1 sweet potato, diced

3 TBSP butter

2 TBSP honey

Instructions

1. Preheat oven to 425f.  Peel and dice sweet potato and place in a bowl.  In a small saucepan combine the butter, honey, sriracha, salt, and pepper.  Whisk to combine and bring to a boil on the stove.  Reduce heat and simmer for 2 minute.  Remove sauce from heat.

2.  Cover a baking sheet with parchment paper.  Pour about 3/4 of the sauce mix over the potatoes.  Stir well until all of the potatoes are coated.  Set the reserved sauce aside.  Spread sweet potatoes out on the baking sheet.  Bake 20-25 minutes or until fork tender.

3. Remove potatoes from the oven.  At this point you can either drizzle the remaining sauce over the sweet potatoes on the baking sheet and serve from there, or you can move the sweet potatoes to a bowl and stir in the remaining sauce.  Note: if the sauce thickens too much while the potatoes are cooking feel free to heat it back up on the stove for a few minutes.
