French Onion Beef and Biscuits

A cozy cast iron skillet dinner with caramelized onions, savory beef, home‑canned French onion soup, and golden biscuits sitting right on top.

There’s something about French onion flavors that just feel like winter comfort — slow‑cooked onions, rich broth, and that deep savory aroma that fills the whole kitchen. This French Onion Beef and Biscuits skillet is one of those meals that tastes like it simmered all afternoon, but it comes together quickly and uses simple pantry staples.

Everything cooks in one cast iron skillet, which gives the onions a beautiful caramelization. I used frozen onions from my summer garden along with a jar of my home‑canned French onion soup, which adds incredible depth and makes this recipe even easier to pull together on a busy night.

The French onion soup recipe I use comes from one of my favorite canning cookbooks. If you want to try it yourself, here’s the link to the exact book I use:

For the topping, I used my Garlic Cheddar Drop Biscuits, which rewarm beautifully over the savory beef and add the perfect cheesy, garlicky finish.

It’s hearty, cozy, and perfect for cold evenings when you want something warm and satisfying without a lot of fuss.

For the Beef & Onion Filling

  • 1 lb ground beef
  • One cup diced yellow onion
    • Frozen onions from the garden work perfectly here
  • 1 pint home‑canned French onion soup
    • Recipe from my favorite canning cookbook — link above
  • 1 tbsp olive oil
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 1 1/2 cups shredded mozzarella or Gruyère cheese (optional but delicious)

** you may need to add a small cornstarch slurry to thicken.**

For the Biscuits

  • 1 batch Garlic Cheddar Drop Biscuits
(or your favorite biscuit recipe — homemade or canned)
  • Optional: melted butter + parsley for brushing

Instructions

1. Caramelize the onions in cast iron

Heat olive oil in a large oven‑safe cast iron skillet over medium heat. Add diced onions (fresh or frozen) and cook slowly, stirring often, until deep golden and caramelized — about 15 minutes.
Frozen onions may release extra moisture at first; just keep cooking until it evaporates and the onions begin to brown.

2. Brown the beef

Add the ground beef to the skillet with the onions. Cook until browned, breaking it apart with a spoon. Drain excess grease if needed.

3. Add home‑canned French onion soup

Pour in your home‑canned French onion soup and stir to combine.

4. Build the French onion flavor

Stir in the remaining seasoning. Let cook for 1-3 minutes. Add a cornstarch slurry if necessary to thicken.

5. Add cheese (optional)

If using cheese, sprinkle on top of the beef mixture. Bake at 350 for 5-10 minutes or until the cheese is melted

6. Add biscuits

Add the pre-baked biscuits on top of the melted cheese.

7. Bake

Return the skillet to the oven and bake for another 5-10 minutes or until the biscuits are fully warmed but not getting over cooked.

8. Serve warm

Recipe Notes

  • Home‑canned French onion soup adds incredible depth and makes this recipe fast and flavorful.
  • The soup recipe I use is from a trusted canning cookbook — link above.
  • Frozen garden onions work beautifully — no need to thaw.
  • Garlic Cheddar Drop Biscuits add a cheesy, garlicky finish that pairs perfectly with the savory beef.
  • Cast iron gives the best browning and crisp biscuit edges.
  • Fresh‑milled flour biscuits add extra nutrition.
  • Gruyère gives the most classic French onion flavor.
  • Leftover roast beef can replace ground beef for a richer texture.

Substitutions

  • Ground Beef: Swap with ground venison, turkey, or leftover shredded roast beef.
  • Home‑Canned French Onion Soup: Use store‑bought French onion soup or 1 cup beef broth + extra onions if you don’t have home‑canned jars on hand.
  • Frozen Garden Onions: Fresh onions work just as well — just dice and caramelize as usual.
  • Garlic Cheddar Drop Biscuits: Any biscuit dough works here, including canned biscuits or your favorite homemade recipe.
  • Cheese: Mozzarella, Gruyère, Swiss, or even white cheddar all pair beautifully with the French onion flavors.
  • Fresh‑Milled Flour: All‑purpose flour works perfectly if you don’t have fresh‑milled on hand.

Storage & Reheating

  • Refrigerator: Store leftovers in an airtight container for 3–4 days. The biscuits will soften slightly as they sit, but the flavors get even better.
  • Freezer: Freeze portions in freezer‑safe containers for up to 2 months. For best texture, freeze the beef mixture and biscuits separately if possible.
  • Reheating (Oven): Warm in a 350°F oven for 10–15 minutes, or until heated through. This helps the biscuits crisp back up.
  • Reheating (Microwave): Heat individual servings in 30‑second intervals until warm. The biscuits will be softer, but still delicious.

A Note About Canning Recipes

I use a lot of home‑canned ingredients in my cooking, including the French onion soup in this recipe. However, I won’t be sharing canning recipes on my blog. Safe canning requires following properly tested, scientifically verified recipes from trusted sources, and it’s important not to alter those formulas.

If you’re interested in canning your own French onion soup, I recommend checking reputable, tested resources — including the cookbook I linked above — for safe, approved methods. I’ll always share how I use my home‑canned foods in meals like this one, but I leave the canning instructions to the experts who rigorously test them.

Tools I Used

These are the tools I reach for every time I make this French Onion Beef and Biscuits skillet. They’re the same ones I use daily here on the homestead — sturdy, reliable, and perfect for recipes that start on the stovetop and finish in the oven.
